Crystal Rock Sugar

Rock sugar is ice-like crystals refined from white granulated sugar. It is a large-grain crystalline sugar made from sucrose and protein as raw materials, re-dissolved and cleaned after recrystallization. It can be transparent or translucent. Because of its crystal-like shape, it is also called "ice grain". Naturally produced rock sugars are white, yellowish, and light gray.
